Using a single bean brings purity to the process and creates very well defined traits of aroma and flavor, accentuated with very special notes of Chocolate and Nuts. Those special traits have made us the recipient of 10 different medals in the last 4 North American editions of the Golden Bean Roasters Competition.
The icing on the cake of our gourmet coffee is that every single bag is roasted at Origin and upon your order so it is as fresh as it can get.
More importantly, we exclusively use a roaster that works on a bed of hot air instead of the traditional roasting method where the drum rotates over a bed of gas flames. This unique method is slow, so slow that it takes almost double the time of regular methods and produces a very smooth taste. The perfect complement to a wonderful bean.
One very important characteristic of our method is that our roasting range is lighter as a whole.
Using lower temperatures we achieve a lighter range where our 4 roasts are always smooth and have absolutely no bitterness.
On the surface, the bean shows a homogenous brown color and it does not have any oils. Those oils, as seen in other coffee, are a sign of over-roasting and the main source of bitterness in the taste of coffee.
